Healthy Egg Salad Bites
I love this yummy snack recipe. Healthy Egg Salad Bites are super yummy and filling — yet light. Easy to make so simple!
Ingredients:
4 hardboiled eggs
1/4 cup plain greek yogurt
1/2 cup chopped celery
2 tbsp parsley
2 tsp Dijon mustard
1/4 tsp ground black pepper
1/8 tsp himalayan salt
pinch of cayenne pepper
1 long English cucumber
Directions:
Using a medium bowl mash the hard-boiled eggs with a fork. Add the yogurt, celery, parsley, dijon mustard, pepper, salt and cayenne and stir well to combine.
Cut the cucumber in half across. cut each piece in half lengthwise. Scoop out the seeds and discard. Fill each of the four cucumber halves with the egg salad and serve.
