Shrimp Summer Rolls
Shrimp Spring Rolls with SunButter Sunflower Butter sauce…
Ingredients:
1/2 lb cooked, peeled, sliced in 1/2
1 shredded carrot
1 thinly sliced cucumber
Cilantro
Lettuce
Mint
Rice paper
Directions:
Soak the rice paper, wrap all the above ingredients
Sauce:
Mix 1/2 cup sunbutter with
1/2 cup coconut milk
1 tbsp fish sauce
2 tbsp hoisin sauce
1 tsp crushed red pepper flakes
1 tsp minced ginger
Use as a dipping sauce or drizzle on top!
